Carrot and Corriander Soup

A warm hearty soup with simple ingredients and suitable for vegetarians, great to keep warm on a Winter's evening
Ingredients
- 500g Carrots
- 1 Onion
- 1tsp ground coriander
- 2 Pints vegetable stock (can buy oxo)
- freshly chopped coriander (use as you like)
- salt and pepper
- Olive Oil
Method
- Heat 1 table spoon oil into a sauce pan and soften chopped carrots and onion for 3-4 minutes
- Add ground coriander and cook for 1 minute
- Mix in veg stock and simmer until carrots and onions are cooked and softened
- Blend until reasonably smooth
- Garnish with fresh coriander and season to taste.
