Baked Jacket Potato with Beans and Cheese

Traditional Jacket Potato recipe, this uses beans and cheese but baked jacket potatos are tasty with almost any filling.  Don't forget to eat the skin!!!  

This was popular with my Spanish flatmates when I lived in Spain you can get all the ingredients from El Corte Ingles. 

Ingredients

  • 1 Large Potato
  • Cheddar Cheese
  • 1 Tin of Baked Beans
  • Worchester Sauce
  • Salt and Pepper
  • Butter

Method

  1. With a fork pierce your potato 5 or 6 times around the potato this will allow it to cook faster.  Place the Potato in the middle of your oven on full heat for 1hours - 1hour 30 mins depending on your oven.  The aim is to have a potato that is crispy on the outside and soft on the inside you can pierce the potato with a knife to check.
  2. 5 minutes before you remove your potato from the oven:
    Open the tin of baked beans and heat in a saucepan, also add a couple of squirts of Worchester sauce for flavour.
    Using a cheese grater, grate enough cheese to cover the top of your potato.
  3. When the potato is ready, slice through the middle and using the fork push down and mash the potato  (try not to break the skin) once the potato is soft, add a knob of butter which will quickly melt. 
  4. Place the beans on top of the potato and then spinkle the cheese 
  5. Finally finish off with salt and pepper over the top. 

The Photo uses 1 and a half potatoes as they were quite small so don't worry if your potato looks different
